## Korean BBQ in Jongno — the palace district restaurants The BBQ houses around Jongno 3-ga and Nakwon-dong are among Seoul's oldest — many have been running the same charcoal grill setup for 30–40 years. The style here is traditional rather than trendy: heavy iron grates, banchan (side dishes) brought without asking, and soju served cold in small glasses. This is BBQ as Koreans eat it. ## What to order — galbi vs. samgyeopsal Galbi (갈비) is short rib — pricier, fattier, with more complex flavour. Samgyeopsal (삼겹살) is pork belly — cheaper, ubiquitous, and best when grilled over charcoal rather than gas. Most tables come with ssam (lettuce and perilla leaves for wrapping), garlic, sliced green chilli, and doenjang dipping paste. Order one portion per person to start; it's easy to add more. ## How BBQ dining works You cook the meat yourself — staff will set you up and leave you to it in most traditional Jongno restaurants.
